  • 60 gchickpea flour
  • 120 mlwater

  • 1 mediumcapsicum (bell pepper), finely diced
  • 1/2 smallonion, finely diced
  • 2 clovesgarlic, minced
  • 1 1/2 tbspnutritional yeast
  • 1 tspDijon mustard
  • 1/2 tspsmoked paprika
  • 1/2 tspground cumin (optional)
  • 1/2 tspsalt (or kala namak for an eggy flavor)
  • 1 pinchblack pepper, to taste
  • 1 tbspolive oil

Lemon-Tahini Dressing

  • 1 tbsptahini
  • 1/2 mediumlemon, juiced
  • 2 tbspwater (1 to 2 tbsp, adjust as needed)

Instructions

  1. Make the batter: Whisk together the chickpea flour, water, nutritional yeast, Dijon mustard, smoked paprika, cumin (if using), salt, and black pepper in a bowl until completely smooth. Set aside.
  2. Prepare the zucchini: Grate the zucchini, then firmly squeeze out as much excess liquid as possible using your hands or a clean tea towel. Removing this excess moisture ensures the scramble browns nicely in the pan instead of steaming.
  3. Cook the vegetables: Heat the olive oil in a large frying pan over medium-high heat. Add the diced onion, capsicum, and squeezed zucchini. Cook for 3 to 4 minutes, stirring occasionally until the vegetables soften.
  4. Add garlic: Add the minced garlic to the pan and cook for 30 seconds until fragrant.
  5. Add the batter: Pour the chickpea mixture into the pan over the vegetables. Leave it undisturbed for about 30 seconds to begin setting, then stir and scrape the bottom of the pan with a spatula, breaking the mixture into irregular pieces.

  8. Make the dressing: In a small bowl, whisk together the tahini and fresh lemon juice. Gradually stir in 1 to 2 tablespoons of water until you have a smooth, pourable dressing.
  9. Serve: Spoon the warm scramble into a bowl and drizzle with the lemon-tahini dressing. Finish with extra black pepper and a little nutritional yeast if desired.
