- 200 gbrown lentils
- 200 gbrown rice
- 1 smallonion, finely chopped
- 1 mediumzucchini, grated
- 1 mediumcarrot, grated
- 200 gbread crumbs (plus extra for rolling)
- 2 tspmixed Italian herbs
- 1 pinchsalt and pepper to taste
- 2 tbspsunflower oil (for frying and greasing)
- 1 tbspdry vegetable stock
Instructions
- Prepare the grains: Cook the lentils according to package directions in water with a little dry veggie stock. Cook the brown rice according to package directions.
- Prep the vegetables: Finely chop the onion. Trim and grate the carrot and zucchini.
- Sauté the vegetables: Fry off the onion in a little sunflower oil until lightly browned, then add the grated carrot and zucchini. Cook for 5 to 10 minutes on medium heat until the veggies have softened. You can add a tablespoon of water to help.
- Combine the mixture: In a large bowl, combine the cooked brown rice, cooked lentils, cooked veggie mixture, bread crumbs, and mixed Italian herbs. Season with lots of salt and pepper.
- Form the patties: Mix well until thoroughly combined and start to form your patties. Form large balls and then flatten them slightly in between your palms. Keep them small to medium, as larger ones do not hold together as well.
- Coat the patties: Coat each patty in extra bread crumbs on each side.
- Prepare for baking: Place the patties in a baking tray greased with a little sunflower oil. Brush each patty with a little sunflower oil or alternatively use an oil spray.
- Bake: Bake at 200°C (400°F) for about 20 to 30 minutes until golden brown. Alternatively, you can fry the patties for about 30 seconds on each side in a little oil. They soak up more oil this way, but both versions are delicious.
