Mediterranean Tofu Marinade

45 min
2 Base Servings

Considering that fresh tofu is neutral, it perfectly absorbs the aromas of Mediterranean spices.

Say goodbye to bland plant protein forever with this bright, aromatic Mediterranean Tofu Marinade. Packed with zesty fresh lemon juice, pungent minced garlic, extra virgin olive oil, and crushed dried oregano, this liquid magic turns standard firm tofu into savory Mediterranean masterpieces.

Why This Recipe Works

Acidic lemon juice brightens the natural flavor profile of soy while extra virgin olive oil coats each tofu block, creating a protective layer that crisps to perfection on a hot grill or skillet. Oregano and garlic steep into the porous curds, evoking authentic Grecian tavern notes.

Chef's Pro-Tips

  • Press thoroughly first: Use a tofu press or heavy cast-iron pan to gently expel trapped water from the tofu block for 20 minutes prior to cubing. A dry sponge absorbs marinades exponentially faster!
  • Salad bowl transformation: Crumble cold marinated tofu directly over cucumber, tomato, and red onion salads as a protein-rich vegan alternative to traditional feta cheese.
