15 min
6 Base Servings

If you love Indian food, then you should try this tasty vegan tikka masala. Easy to prepare and cooked with a slow cooker, served as a healthy lunch with optional rice of your choice.

Bring vibrant Indian restaurant aromatics directly to your dining room table with this warming Slow Cooker Vegan Tikka Masala. Featuring chickpeas, tender sweet potatoes, and green peas swimming in a velvety coconut ginger tomato curry, it is wholesome plant-based dining at its finest.

Why This Recipe Works

Simmering robust aromatics like freshly grated ginger, minced garlic, garam masala, turmeric, and cumin over gentle steady heat softens coarse fiber roots while enriching coconut milk with complex spiced layers. Chickpeas absorb the golden curry essence completely without losing structural integrity.

Chef's Pro-Tips

  • Toast your spices first: For an extra layer of culinary richness, sauté your dry masala spice powders in coconut oil in a warm skillet for 60 seconds before transfering into the crockpot bowl!
