This comforting Shepherd's Pie features a hearty base of grated tempeh and cooked lentils, offering a satisfying texture akin to traditional minced meat. The dish is topped with a naturally creamy and fluffy potato and cauliflower mash that bakes to a beautiful golden crisp in the oven.
Why This Recipe Works
Grated tempeh provides an excellent minced texture, and browning it develops a deep, savory flavor. The combination of potatoes and cauliflower in the mash lowers the overall heaviness while providing a light, fluffy topping that crisps perfectly under high heat.
Chef's Pro-Tips
- Grate the tempeh: Using a box grater for the tempeh block creates the perfect crumbly texture to mimic traditional pie fillings.
- Drain well: Make sure the boiled potatoes and cauliflower are well drained and allowed to steam dry for a minute to prevent a watery mash.
- Crispy topping: Using a fork to scrape ridges across the top of the mash increases the surface area, resulting in extra crispy, golden peaks during baking.
Ingredients
Mash
- 600 gstarchy potatoes, peeled and chopped
- 400 gcauliflower florets (about 1/2 head)
- 30 mlolive oil (or vegan butter) and a splash of water
- 1 pinchsalt and black pepper to taste
Filling
- 1 mediumonion (approx. 150g), finely diced
- 200 gblock of tempeh, grated on a box grater
- 250 gcooked brown or green lentils
- 250 mlwater (or vegetable stock)
- 15 mlolive oil (for frying)
Instructions
- Boil: Place 600g chopped potatoes and 400g cauliflower florets into a large pot. Cover with cold water and add a generous pinch of salt. Bring to a boil and cook for 15 minutes, or until both are completely fork-tender.
- Drain: Pour off all the water and let the vegetables steam in the hot pot for 1 minute to dry out.
- Mash: Add 30ml olive oil, salt, and pepper. Mash thoroughly until smooth and fluffy. Add a tiny splash of water if it feels too dry. Set aside.
- Sauté Onion: Heat 15ml olive oil in a large frying pan over medium heat. Add the diced onion and cook for 5 minutes until soft and translucent.
- Brown Tempeh: Add the 200g grated tempeh to the pan. Cook for 6 to 8 minutes, stirring frequently, until the tempeh crumbles turn lightly golden and fragrant.
- Combine: Stir in the 250g cooked lentils.
- Simmer: Pour in the 250ml water (or stock) along with your chosen spices. Bring to a simmer and let it cook for 5 minutes so the flavors fuse and the mixture forms a light, cohesive sauce.
- Preheat: Turn your oven to 200°C (400°F).
- Layer: Transfer the hot tempeh and lentil filling into a medium-sized baking dish. Spread the potato-cauliflower mash evenly over the top.
- Create Ridges: Use a fork to gently scrape across the top of the mash. These little ridges will catch the heat and get extra crispy.
- Bake: Place in the oven for 25 minutes until the filling bubbles at the edges and the top peaks turn golden-brown. Let cool for 5 minutes before serving.
